  • Wash acorn squash. On a Cutting Board cut the acorn squash into halves lengthwise. Scoop out all the seeds.
    Add one cup of water to the Instant Pot. Add the Instant Pot Trivet on the bottom of the Instant Pot. Put acorn squash halves on the trivet.
    Place the lid on the Instant Pot. Use the manual setting, and set the time for 4 minutes. Use Natural Release, and open the Instant Pot once the pin drops. Acorn squash will be very hot, so let it cool for a few minutes.
  • While acorn squash cooks, make the turkey. Peel and wash onion. On a Cutting Board chop onions and pecans.
    On a skillet heat up the oil. Add onions, and saute for a few minutes.
    Add turkey and garlic powder. Break up the turkey into crumbles, and saute while turning it from time to time. Cook until the turkey is completely cooked.
    Add cranberries and pecans, and cook for another minute or two, until warm through.
  • Once cooked acorn squash is cool enough, stuff with the cooked ground turkey and serve with Beet Salad with Avocado and Fresh Mozzarella.
