How To Put Vegetables In A Rainbow Order

It is really simple to put vegetables in rainbow order for roasting. Remember Roy G Biv from school? That name stands for rainbow colors:


R – Red
O – Orange
Y – Yellow
G – Green
B – Blue
I – Indigo
V – Violet

Here are the vegetables you use for those colors:

Red Bell Pepper for Red
Carrots for Orange
Yellow Bell Pepper for Yellow
Broccoli for Green
Red Onion for Violet

We didn’t cover all the colors in Roy G Biv, but this is definitely enough vegetables to create an amazing rainbow!

You can use other vegetables to create a rainbow too! Just chop them the same way as we do in the recipe, and use oil and seasoning for flavor.

You can use red tomatoes for red, orange bell peppers for orange, green bell peppers, or zucchini for green, and eggplants for violet. Use your imagination to create the best veggie rainbow!

How To Make Keto Rainbow Roasted Vegetables

This vegan Keto side dish is so easy to make! Here is how:

1. Wash, clean and chop all the veggies. For bell peppers, remove the seeds and membranes before chopping them. For carrots and onions, peel them and chop. For broccoli, chop it into florets. Make sure to keep the vegetables separately, to create parts of the rainbow.

2. Start arranging them on the sheet pan. First, put red peppers on the sheet pan. Next, and the carrot circles next to the bell peppers:

Next, put chopped yellow bell peppers next to the carrots:

Next, put broccoli right of the yellow peppers:

And now, arrange red onions to the right of the broccoli:

3. Put 2 teaspoons of oil and 1/6 of a teaspoon of Italian Seasoning on each vegetable layer. Carefully mix them in place, so that you don’t mix the vegetables together, and they are still arranged in rainbow order.

4. Bake the veggies in the oven. Take them out mid-way, and turn the veggies. Make sure to keep them in the rainbow order, as you turn them. Put them back in the oven, and bake until they are done.

Ingredients

  • 1 Large Bell Pepper
  • 1 Large Yellow Pepper
  • 2 Medium Carrots
  • 3/4 Pounds Broccoli
  • 1 Medium Red Onion
  • 1 tsp Italian Seasoning
  • 10 tsp Olive Oil

Instructions

  • Preheat the oven to 400F.
  • Wash the red and yellow peppers. Cut into halves, and remove seeds and membranes. Chop the peppers, while keeping them separately.
    Wash and peel the carrots. Cut the carrots into circles.
    Wash the broccoli and cut it into small florets.
    Wash and peel the red onions. Cut into half circles.
  • Arrange the vegetables on the sheet pan. First put red bell peppers on the left, then put the cut carrots next to it, next yellow bell peppers, broccoli and onions.
    Season each vegetables with 2 teaspoons of olive oil and 1/6 of a teaspoon of Italian Seasoning, and carefully mix the vegetables in place, without mixing them together.
  • Put the sheet pan in the preheated oven. After 12 minutes take it out of the oven, and turn the vegetables, being careful to keep them in the rainbow order.
    Return the vegetables to the oven and cook for 12 more minutes, or until they are done.
