1.5 Cups of Quinoa
1 Bunch of Swiss Chard
A few handfuls of Slivered Almonds
1 Lemon
1 Tablespoon of Olive Oil
Salt
Freshly Ground Black Pepper




How To Make Quinoa Salad With Swiss Chard And Almonds

Cook quinoa according to the directions on the package of quinoa. Cool quinoa.

Wash Swiss Chard and trim it. Chop the Swiss Chard on a cutting board, keeping stems and leaves separately.

Heat up the olive oil in a saute pan. Add the stems of Swiss chard and saute for 3-4 minutes. Add the leaves of Swiss chard and cook for 5 more minutes, or until the Swiss chard is done. Cool the Swiss chard.

Toast the slivered almonds for a few minutes, until they turn beige.

Squeeze the juice out of the lemon, and measure a tablespoon of lemon juice.

In a salad bowl combine quinoa, Swiss chard, and a tablespoon of lemon juice. Season with a bit of salt and black pepper and mix. Sprinkle with almonds and serve.
