What Kind Of Meat To Use For Instapot Meatball Soup

We love turkey meatballs in this soup, they are delicious in it, and they make the soup come together great! Ground turkey is best for this soup, and not ground turkey breast. This is because ground turkey breast is leaner, and you want a bit of fat in the meatballs.

If you don’t have ground turkey on hand, use ground chicken instead. It is similar to the turkey, and will work great in this Instapot soup.

Other meat, like beef or ground sausage, will work too, but it will change he flavor of the soup. Beef meatballs are more robust than turkey, and they will completely change the flavor of the dish.

How To Make Instant Pot Hearty Turkey Meatball Soup

This recipe for meatball soup with vegetables is so simple and delicious! Here is how to make it. See the recipe card below for all the measurements, timing and meatball soup calories.

First, prepare the vegetables. Wash and peel onions, carrots, potatoes.

Make the porcupine meatballs. To do that, combine all the ingredients for the meatballs together and mix. Form medium sized meatballs.

Start the Instant Pot on the Saute mode. Add some oil. Once the oil is hot, add onions and carrots and saute.

Next, add spices and potatoes, and saute a few more minutes.

Add two cups of water to the vegetables. Arrange the porcupine meatball on top of the vegetables, the way you see it in this picture.

Add more water to the Instant Pot, so that the pot is about 2/3 filled. Pressure cook the soup, then use Natural Release, and wait for the valve to drop.

– Make sure to use ground turkey, rather than ground turkey breast. Ground turkey contains just the right amount of fat, which is needed to make this soup extra delicious.

– If you don’t have ground turkey, it is fine to use ground chicken instead to make chicken meatballs.

– We don’t really recommend making beef meatballs or lamb meatballs for this particular soup, because those meatballs will give the soup a completely different flavor profile. The soup will still be good, but not similar to the one in this recipe.

– You can add celery to this soup. If you do, add at the same time as carrots and onions.

– You can add spinach or escarole to this soup as well. Add them when adding potatoes, and saute to decrease the green vegetables in size.

– Do you like tiny meatballs? You can make mini meatballs instead of the medium ones we make. They will be just as delicious!

– Can you make the meatballs without the rice? You definitely can do that. Kids love the porcupine meatballs in this soup, but they will be just as tasty without the rice.

  • Combine turkey, egg, bread crumbs, garlic powder and rice and mix. Make medium sized meatballs and set aside.
  • Set the Instant Pot to Saute and add oil to the Instant Pot. Once the oil is hot, add the onions and carrots. Saute for a few minutes, then add potatoes and saute for a few more minutes.
    Add two cups of water, salt, pepper and mix. Arrange porcupine meatballs on top of vegetables. Add enough water so the the pot is about 2/3 full.
  • Place the lid on the Instant Pot, use the manual setting, and cook for 25 minutes.
    Use Natural Release, and wait for the valve to drop. Carefully open the lid and mix the soup.
    Serve with Blue Cheese Wedge Salad and Strawberry Blueberry Infused Water.
