Trim the leeks by cutting off the roots on the bottom of the leeks. Cut off the tough dark green parts on the top of the leeks, but leave the light green and white parts. Take off any wilted pieces. Wash the leeks.

Cut each leek lengthwise into two halves. Chop each half leek crosswise into half-circles. Separate the slices into layers and wash the chopped leeks again. Doing this will help you get rid of any dirt between the layers of the leeks. Dry the leeks.

Add olive oil and butter into a soup pot. Once the oil and butter warm up, add the leeks to the soup pot. Saute the leeks until they are soft, about 5-10 minutes.

Peel the potatoes, and cut the potatoes into pieces on a cutting board. Add potatoes and chicken stock to the pot. If the stock isn’t covering all the ingredients, add enough water to cover the leeks and potatoes.

Add the Bay Leaves to the pot, and bring the pot to boil. Reduce the heat, and simmer the Potato Leek Soup until the potatoes are cooked. Season with salt and black pepper.

Once the potatoes are done, take the soup off the heat. Once the soup cools, remove the Bay leaves from the soup. Then use a stick blender or a regular blender to puree the soup and serve the soup.
