How To Cook Roasted Cauliflower Soup

Want to make a soup that sounds very gourmet, but is very easy to make? “Roasted any veggie” soups are all the rage now, and many restaurants serve these kinds of soups.

Roasted asparagus soup, roasted cauliflower soup, roasted butternut squash soup — I see these soups on many restaurants’ menus. The great news about a soup made with any roasted vegetable is that it is very simple to make.

All you need is to roast the vegetable that you are making soup with, and then make soup using roasted vegetable. Then, blend the soup, and that’s it! Roasted vegetable soups sound complicated, but they aren’t!

Roasted Cauliflower Soup Ingredients

2 Medium heads of cauliflower
2 Tablespoons of Olive Oil
Salt
Freshly Ground Black Pepper

3 Carrots
1 Medium Onion
2 Medium Potatoes
2 Tablespoons of Olive Oil
Water or Chicken Stock

How To Cook Roasted Cauliflower Soup

Note: This recipe does not contain heavy cream/half-n-half, but the cauliflower soup turns out nice and creamy anyway because of potatoes. If you’d like your cauliflower soup even creamier, add a bit of either heavy cream or half-n-half.

Wash two cauliflower heads and separate them into small florets. Toss the cauliflower florets with olive oil, salt and pepper and roast for 20-30 minutes or until it looks golden. Here is information on how to make roasted cauliflower.

Once cauliflower is done, chop carrots and onions on a cutting board. Heat up olive oil in the soup pot, add chopped onions and carrots to the soup pot, and cook for about 5 minutes. Add chopped potatoes and water or chicken stock. Bring the soup to boil and reduce the fire to low and simmer until potatoes are almost done.

Add roasted cauliflower and cook the soup for a few more minutes. Take the soup off the heat. Once the soup is cool enough, blend it until smooth.

Use a hand blender to blend this soup. A much simpler process, and fewer items to wash, than when using a countertop blender.
