I have always enjoyed Chocolate Cookie Bars that I have tried, when someone else brought them from a bakery or a coffee house. And I always thought that they are hard to make, so I usually stuck to making chocolate chip cookies, when I wanted to chocolaty treat.

Do you love chewy chocolate chip cookies? Then you must make these bars! They are even more chewy than cookies — they are just like chewy cookies, but they are better, because the bars are thicker than cookies!

Then one day I really wanted a cookie bar, and I figured I will try making it on my own. I have tried a bunch of different recipes, combined a few together, and here is what I came up with. You will love these cookie bars too — they are amazingly delicious, and so simple to make!

Made with only 8 ingredients, these are the easiest cookie bars ever! And because they are so full of chocolate chips, everyone will want to eat them. In fact, these cookie bars are known to disappear as soon as you turn around. Make sure to grab a piece for yourself, otherwise nothing will be left in less than 5 minutes!

There are two things that you must have in order to make this amazing dessert. One is 9×9 Metal Baking Dish. Make sure that it is a metal dish, as that is what we tested this recipe in. If you don’t have one, click here to buy 9×9 Metal Baking Dish for $4.81. Seriously, this is the cheapest I have ever seen it!

And the other thing that you need is Parchment Paper. These cookie bars will stick to the pan, so you won’t be able to get them out cleanly, unless you use Parchment Paper. And it will also be hard to wash, with all the stuff sticking to it. Make sure to use Parchment Paper to save a lot of time on cleanup!

These delicious cookie bars are extra delicious! But the best thing about them is that you only need 8 ingredients to make them, and they are so simple to make!

Just mix together the ingredients, add chocolate chips, and bake. This will result in most delicious, soft on the outside chocolate cookie bars.

How To Make Chocolate Chip Cookie Bars

These cookie bars are so simple to make, that you can even call them lazy chocolate chip cookie bars! Check the recipe card below for the amounts of ingredients and timing. Here is how to make them:

Melt the butter and cool it, so that it is not hot. You want the butter to not be hot, so that it does not cook the rest of the ingredients. Pour butter into a mixing bowl. Next, add the brown sugar and mix butter and brown sugar together.

Add eggs and vanilla extract and mix. Next, in another mixing bowl combine flour, baking soda and starch, and mix them together.

Add the flour mixture to the butter mixture, and mix all the ingredients together. Once everything is mixed together, add chocolate chips and mix again.

Line the baking dish with Parchment Paper. Do not skip this step, otherwise the cookie bars will stick to the baking dish, and will be impossible to take out.

Pour the batter in the baking dish, and spread it evenly. Bake.

Once the delicious cookie bars are done baking, cool them in the baking dish, then take them out and cut into portions.

Ingredients

  • 16 tbsp Unsalted Butter 2 sticks
  • 1β…“ cups Brown Sugar
  • 2 Eggs
  • 2 tsps Vanilla Extract
  • 2 cups All Purpose Flour
  • 1 tbsp Corn Starch
  • 1 tsp Baking Soda
  • 1.5 cups Dark Chocolate Chips

Instructions

  • Melt butter in the microwave, and cool it for 5-10 minutes. Add brown sugar and mix. Add eggs and mix. Add vanilla extract and mix.
  • In another bowl combine flour, baking soda and starch, and mix them together.
  • Add the flour mixture to the butter mixture, and mix together. Add chocolate chips and mix again.
  • Preheat the oven to 350F. Line the baking dish with parchment paper.
    Pour the batter in the baking dish, and spread it evenly.
  • Bake for 27-33 minutes. To test whether it is done, use a tooth pick. The toothpick should come out clean.
    Let the cookie bars cool in the pan, before removing and cutting into pieces.

    I baked these today. The flavor of the bars is very good. However, they did not bake up very well. I used the correct size metal pan. The outside was golden, edges were very brown. The toothpick came out clean. I let them cool. When I cut into them, the layer under the top of the bar was extremely undercooked & gooey. If I had left them in longer, the outside would have burned. πŸ™

    • Hi Heather, so sorry that the bars didn’t work out. Once they completely cooled off after a few hours, were they still too soft on the inside? They do firm up a bit, once they cool completely. And to confirm, your pan was 9 by 9, correct, not 8 by 8?

      To troubleshoot, was the consistency of your batter similar to the one in the pictures above? How long did you end up baking them for?

      It sounds like you need to cook them a bit longer, the edges in the pictures are also a bit more brown than the rest of the bars. But if the edges became very brown, you may need to lower the temperature a bit, and bake the bars a bit longer.

    This kept the kids busy in the kitchen, I left the four of them (aged 10, 10, 12 & 13) with your instructions to make for themselves! They came out perfectly, and they even saved a slice for me, with a cup of tea. Before I had to tidy up after them!
