Every time I make meatballs, the recipe I use is slightly different. For example, for my minimalistic meatball recipe, I use just a few ingredients in addition to meat. In this recipe I also used an egg to hold the meat and other ingredients together, but no bread crumbs or Parmesan cheese. Sounds pretty simple, right?

This one is also a simple meatball recipe, but I took out the egg and added bread crumbs and Parmesan cheese for both more flavor and to hold other ingredients together. But guess what happened when I put more dry ingredients (bread crumbs and cheese) and took out the wet ingredient (egg)? That’s right, the meat was too dry. So I added some water to the meat mixture. Not too much, just a few tablespoons, so that you can roll your meatballs out.

And here is the deal with Parmesan cheese. I am a big proponent of grating your own, right before you cook. But here I already had some grated cheese, so I added it inside of the meatballs. It still turned out great, so if you have some grated Parmesan cheese on hand, add it to the meatballs.

The cheese on top of the meatballs that you see in the picture was not grated. In fact, I used a vegetable peeler to get larger pieces of Parmesan to top the meatballs.

The sauce for the meatballs is the homemade tomato sauce.

What will you serve with these simple meatballs? How about a salad: Cucumber salad, Tomatoes, Onions and Cucumbers Salad, Strawberry Spinach Salad, Avocado Salad With Feta And Radishes.

Peel and chop the onion using a cutting board.

Now you are ready to make meatballs! Your meatballs should be about the size of a large walnut. Arrange your meatballs on a baking sheet.

Pre-heat the over to 375F. Bake your meatballs for 25-35 minutes, or until they are done.

Serve your meatballs with spaghetti and homemade tomato sauce.
