Meyer Lemons and Cranberry Scones

Here are my two recent food discoveries. The first one was that drizzling olive oil on broccoli rabe, after you finish cooking it, dramatically improves its taste. So, here is the plan:

– Boil it first, for about 5-10 minutes.

– Saute in olive oil, with pepper flakes and garlic.

– THEN dress with even more olive oil right before serving it.

By doing this you will definitely improve the taste of this green. Will doing this make it healthier – no, but will it improve the taste – yet.

The second discovery has to do with Meyer lemons. They are these beautiful lemons from California. Meyer lemons are relatives of regular lemons, but they are sweeter and much more orange in color. They look and taste like they are a mix of lemon and orange:

Meyer lemons are delicious, and I have used them in a few different dishes that I will be posting about. I have made Cranberry and Meyer Lemon Scones, Meyer Lemon and Asparagus Risotto, and Meyer Lemon Tiramisu. All were great. Meyer lemons add a lemony flavor that is both similar to your regular lemon, but at the same time different, because the flavors are different and because Meyer lemons are not as sour as regular lemons.

I have a confession to make – this was my first time ever for making scones. I know, I know. The good news is that I found them easy to make. So even if you have never made scones before, try this recipe!

The Cranberry and Meyer Lemon Scones are very easy to make and turned out great. For this recipe, I used dried cranberries, but you can use the fresh ones as well. If you follow the recommendation of the recipe, and use food processor to pulse the ingredients together, it won’t take you long to make the dough for your scones.

Once you have the dough, make your scones and bake them. I made mine circular, you can make yours triangular, circular or in any other shape you’d like. One thing I did differently is I made egg wash and brushed it on top of the scones. I don’t think it was necessary, and, will, in fact, skip it, next time I make scones.
