If you are looking for more delicious couscous recipes, here is one for you – couscous salad with chickpeas, parsley and scallions. For example, Couscous Salad With Eggplants, Feta and Red Onions or Quinoa Salad With Eggplants and Peppers are such salads.

I like to experiment with couscous recipes, and this recipe for couscous salad was inspired by hummus. I took almost all the ingredients from hummus, but I skipped tahini, and substituted scallions for garlic, and added them to this couscous salad.

This couscous salad is easy to make – all you need is couscous, chickpeas, parsley, and scallions. The dressing is lemon juice and olive oil.
