Mediterranean Couscous Salad With Eggplants, Feta and Red Onions

So what happens is you have made fried eggplant and you have made eggplant stacks, and you still have some fried eggplant left over?

I know, that is a huge problem, but someone has got to solve it! I decided to make this couscous salad with fried eggplant, feta, red onions and tomatoes. The combination of couscous, cooked eggplant, raw onions and tomatoes and salty feta is great – all these ingredients compliment each other very nicely.

This couscous salad needed a dressing, so I made Greek salad dressing. The red wine vinegar in the dressing has enough tang to cut through the fried eggplant, feta, onions and tomatoes. It makes the couscous salad tasty and refreshing, exactly what you are looking for.

Knife
Cutting Board
Salad Bowl
Dinnerware Plates

Ingredients For Mediterranean Couscous Salad With Eggplants, Feta and Red Onions

2 cups of uncooked couscous
1 large fried eggplant – make the eggplant using the Fried Eggplant Recipe
1/2 of a small red onion
2 medium tomatoes
3-4 oz of Feta cheese
A handful of Parsley

Dressing – Greek Salad Dressing

How To Make Mediterranean Couscous Salad With Eggplants, Feta and Red Onions

Cook the couscous according to the directions on the package.

Chop the fried eggplant, onions, tomatoes and parsley. Crumble feta.

In a salad bowl combine couscous, eggplant, onions, tomatoes and parsley. Add the dressing and stir to combine.

Serve the couscous salad on dinnerware plates.

  1. Biana, I have been trying to cook more couscous, so this recipe is exactly what I need. Do you think a dressing of just a bit of olive oil and apple cider vinegar will work here?
