Most people have never heard of fried pasta. I’m 60 and we always fried it in butter the next day when I was a girl. Spaghetti is also awesome tossed in a bit of olive oil in a frying pan the next day. It tastes completely different. The noodles are thinner and have a different quality and texture - almost like a new dish.
Thanks for sharing this. I have never added the eggs but will try it. Sort of like fried rice or Chinese noodles.
