Thai Chicken Salad Recipe
I love Chinese food and Thai food, but I do not eat spicy food. This is why the Asian food recipes that I have posted in the past, Fried Rice Recipe, Beef Stir Fry, Broccoli Stir Fry, are very mild dishes.
But because I don’t eat spicy food, I cannot order a lot of dishes at Chinese and Thai restaurants. Sometimes I see people at Asian restaurants getting great looking dishes brought to their tables. I inquire what those dishes are, hoping that I can order them as well. But many times, after I consult the menu, I find out that the dish is served spicy.
One of the dishes that I always want to order at Thai restaurants, but never do, because it is too spicy for me is the Thai Chicken Salad (Lard Gai Chicken Salad). It always looks fabulous with all the herbs, but it is also quite spicy.
So I decided to make the Lard Gai Chicken Salad myself. This way I control how spicy the salad will be, and I will be able to eat it!
This salad is fabulous because of the combination of all the herbs and spices. I still put a few pepper flakes in (I can handle a few), as well as garlic, ginger, fresh basil, scallions and cilantro. You can eat the salad as is, or you can wrap it into lettuce leaves (such as Boston lettuce) to make Chicken Lettuce Wraps. Both options are great.
Which chicken meat to use is really up to you. You can use ground chicken breast or you can use just ground chicken. I am using soy sauce in the recipe instead of fish sauce, but you can definitely add a bit of fish sauce to add the additional layer of flavors.

Ingredients For Thai Chicken Salad
1 Pound of Ground Chicken
A few pepper flakes
3 Cloves of Garlic
1 Teaspoon of Ginger
1 Tablespoon of Soy Sauce
1/2 of a Lime
4-5 Scallions
A Bunch of Basil
A Bunch of Cilantro
Oil for frying
Salt, pepper to taste
How To Make Thai Chicken Salad
Mince garlic and ginger. Wash and chop the scallions, cilantro and basil. Juice the lime.
Heat up the oil in the saute pan. Add pepper flakes and saute for 20 seconds. Add chicken and saute for a few minutes. Add garlic and ginger and saute for a few more minutes. Add soy sauce and continue cooking until chicken is done.
Once chicken is done, stir in basil, cilantro and scallions. Add lime juice and mix everything together. Add salt and pepper if needed and serve.
Serve this Thai Chicken Salad with rice, or you can make chicken wraps by wrapping chicken into lettuce leaves.
