Egg Salad Recipe

I love egg salad and egg salad sandwiches, so I am always on a lookout for easy recipes for egg salad. There are many different variations on egg salad, and here is one of my favorite. Crunchy onions and cucumbers really adds another dimension to the egg salad. If you have never added cucumbers to your egg salad, I strongly recommend that you try it!

Another thing that I like to do with egg salad is when I make egg salad sandwiches, I make them with hot dog buns. This is an unusual and fun way to serve your egg salad!

I like finely diced red onion, cucumber and dill or paprika (not both) in my egg salad with good sea salt. If I”m feeling up to it- sometimes even a smidge of roasted garlic works wonders to dress up a staple like egg salad.

I’d never even heard of putting cucumbers in egg salad though I have put pickles in it.

    Hey Biana,
This is a great recipe and the hot dog buns - a great work around as egg salad tends to be drippy, the bun will better absorb the juices without falling apart. Will recommend this onward! I add cucumber myself, (which is one of the things that tends to produce so much juice as they sit in the fridge) and also alfalfa sprouts. My mom used to add pickles and also olives on occasion. Egg salad is so basic you could add almost any other vegetable or pickle and it would taste good. I remember one memorable picnic when Dad made the egg salad and due to his native Southern-ness, we found okra pickle had been added. It tasted ok, just the same. Great blog! BTW, can I suggest an “About the Author/s” block? Would be lovely to know it comes from you! :-)

Hey Biana … I’m here from your Twitter request for egg salad ingredients. :) My mom often put dried curry powder in her egg salad - delish!

Hi Biana…. my recipe is simple, I just add mayonnaise, mustard and diced green olives with pimento. I sprinkle in black pepper. — Susan

My egg salad would not be complete without mustard, relish, and chopped black olives. Just talking about egg salad (one of my all time favorites) makes my mouth start watering. I think I should move away from the computer right now and gravitate toward the kitchen. :-)

I’m not a big fan of cucumbers, so I’d leave those out. Now an egg salad sandwich sounds yummy! I need lunch!
