Wash acorn squash and use a knife to cut it lengthwise.Scoop out the seeds. Put acorn squash halves on a cutting board and cut them into one inch wide slices.
Pour olive oil into a small mixing bowl. Use the basting brush and brush olive oil on the baking sheet.Arrange acorn squash slices on the baking sheet, and baste with olive oil and sprinkle with zaatar. Turn the slices, baste with a bit more oil and sprinkle with zaatar.
