First, a quick update about the most fabulous chocolate cake I have ever made! It is from the Baking Illustrated Cookbook, and it is their flourless chocolate cake. It is pretty easy to make, even for someone like me, who doesn’t bake a lot. And it only has three ingredients. Now, this is not a diet cake – the three ingredients are chocolate, butter and eggs.

But the cake is fabulous – it tastes like chocolate mousse and chocolate cake at once. Word of caution – follow their directions and let the cake set in the fridge. I knew it had to set, but I tried it once it cooled off, and it wasn’t balanced at all. So if you try it after it cools off, that’s not what it is supposed to taste like. Once it sets in the fridge, the flavors really come together and you get one great chocolate cake!

The Baking Illustrated Cookbook is a great holiday gift – for you or someone else!

Now back to the pineapple salsa! I have posted a great Pineapple Salsa Recipe in the past, so here is another one. This pineapple salsa will also go great with fish tacos.

This pineapple salsa recipe is made with tomatoes, a great salsa ingredient. Here are a few other tomato recipes: Caprese Salad Recipe, Tomato Salad With Onions and Blue Cheese, Tomato Salad With Eggplants, Red Onions and Feta.

What I like about this salsa recipe is that it combines vegetables and fruits, thus creating a dish that is very flavorful and delicious. This salsa is also pretty simple to make.
