So if you are looking for a potato salad recipe without mayo, here is a great one. To make this potato salad, combine cooked potatoes, onions and olive oil and vinegar, and mix. The add dill, parsley and blue cheese and mix again.

Ingredients For Potato Salad Recipe Without Mayo

2.5 Pounds of Red Potatoes
1/4 Pound of Blue Cheese
1 Small Onion
2 Tablespoons of Dill
2 Tablespoons of Parsley

2 Tablespoons of Olive Oil
1 Tablespoon of Red Wine Vinegar

How To Make Potato Salad Without Mayo

Wash and chop red potatoes on a cutting board. Boil red potatoes. Once the red potatoes are cooked, wait for them to cool.

Chop onions, dill and parsley on a cutting board. Crumble blue cheese.

In a salad bowl combine potatoes and onions, add olive oil and vinegar and mix gently to combine. Add dill, parsley and blue cheese and mix gently just to combine.

Serve this potato salad with grilled chicken or Reuben Sandwich.
