Eggplant Recipes: Eggplant Stacks With Goat Cheese And Tomatoes

If you are looking for eggplant recipes, this one is a winner! It looks great and tastes even better. I created it when I had some fried eggplants and goat cheese on hand. What can be better than combining two of my favorite foods, goat cheese and eggplants? Apparently, adding tomatoes and a bit parsley makes the combination even more delicious!

These eggplant stacks are a great appetizer and will take you just a few minutes to make if you already have fried eggplant on hand. The stacks are also great for a dinner party. You can definitely make the fried eggplant the day before, and build the stacks right before the party.

Ingredients For Eggplant Stacks With Goat Cheese And Tomatoes:

For one stack:

Two slices of Fried Eggplant
Two tomato slices
Two round goat cheese slices
Minced parsley

How To Make Eggplant Stacks With Goat Cheese And Tomatoes:

Put an eggplant slice on a plate. Top with a slice of goal cheese and a slice of tomato. Top with another eggplant slice, goat cheese and tomato slice. Sprinkle with parsley.
