A perfect side dish for St Patricks Day, or any other day of the year, these Instant Pot Colcannon Potatos are very easy to make, and they taste amazing!

Wash and peel potatoes. Cut the potatoes into medium pieces on the cutting board.Wash the cabbage. Remove the outer leaves of the cabbage, and chop about a pound of the cabbage.Wash and chop the parsley, if using.
Add the water to the Instant Pot Pressure Cooker. Place the cabbage and the potatoes into the Instant Pot, and make sure that the water covers the cabbage and the potatoes. If there isn't enough water in the Instant Pot to cover cabbage and potatoes, add more water to cover.Place the lid on the Instant Pot. Use the manual setting, and cook cabbage and potatoes for 5 minutes. Use Natural Release for the first 10 minutes, and then carefully do Quick Release.
Once the pressure is released and the valve drops, carefully open the lid. Drain the cabbage and potatoes. Next, add salt, pepper, 3 tablespoons of butter and milk and mash the cabbage and potatoes with the masher. Put the last tablespoon of butter on top of the Instant Pot Colcannon Potatoes, and sprinkle it with parsley. Your Instant Pot Colcannon Potatoes are now ready to serve!Serve with Garlic and Broccoli Rabe and Instant Pot Corned Beef.
