Ingredients For Tomato Salad With Cucumbers, Red Onions, Chickpeas And Pita

3-4 Kumato Tomatoes
2 Medium Cucumbers
1/2 of a small Red Onion
1/3 cup of cooked Chickpeas
1 Pita
A handful of Parsley
A handful of Dill

1 Tablespoon of Red Wine Vinegar
3 Tablespoons of Olive Oil
Salt
Freshly Ground Black Pepper

How To Make Tomato Salad With Cucumbers, Red Onions, Chickpeas And Pita

First, make toasted pita. Pre-heat the oven to 350F.

Cut the pita into medium pieces. Arrange the pieces on the baking sheet. Bake until the pita pieces are lightly toasted, about 10 minutes. Cool the pita pieces.

Wash, peel and chop the cucumber and onion on a cutting board. Wash and chop the tomato on the cutting board. Wash and chop dill and parsley.

Make the dressing – combine olive oil and red wine vinegar with a bit of salt and pepper, and mix.

Add tomatoes, cucumbers, onions, chickpeas, dill and parsley to a salad bowl. Crumble the toasted pita pieces into the salad bowl as well. Add the salad dressing and mix the salad with the salad spoon.
