I have posted about Pork and Green Beans Stir Fry that is made with ground pork. I have actually seen the recipe in this post, the eggplant stir fry, made with ground pork as well.

But what if you want to lighten up the recipe a bit and make it a bit healthier? In that case you can used ground chicken instead of ground pork! It will still taste great, and if you use ground chicken breast, you will definitely use less fat in the recipe.

The key for this chicken stir fry recipe is that you still have a lot of flavor, even if you use ground chicken. You should still use ginger, garlic, green onions, pepper flakes, soy sauce and Hoisin sauce to add flavor to the dish.

This chicken stir fry recipe is very easy to make. To start, stir fry eggplants first. Once they are done, remove them from your wok (or skillet), and stir fry ground chicken with pepper flakes, garlic and ginger. Then, once the chicken is cooked, add the sauces, add eggplant back to the skillet and stir fry together for a few minutes. Ingredients for Chicken Stir Fry Recipe With Eggplants

1 pound of Ground Chicken Breast
2 Medium Eggplants
4 garlic cloves
1 teaspoon of ginger
A few pepper flakes
3 green onions (scallions)

3 tablespoons of Soy Sauce
2 tablespoons of Hoisin Sauce
Canola Oil

Ingredients for Chicken Stir Fry Recipe With Eggplants

Wash eggplants and cut into rounds. Arrange eggplant pieces in one layer on a cutting board. Salt each piece and let them stand for about 15-25 minutes. After 15-25 minutes use paper towels to dry the eggplant pieces completely. Chop the eggplant into small pieces.

Chop the garlic. Chop the ginger. Chop the scallions.

Heat up the oil in the skillet. Add the pieces of eggplant and stir fry for 5-7 minutes, until they are done. Remove eggplant from the skillet.

Heat up a bit more oil in the skillet. Add ground chicken and stir fry for 3-5 minutes. Add garlic, pepper flakes and ginger, and stir fry until the chicken is cooked. Add soy sauce and Hoisin sauce, stir fry for a few more minutes.

Add eggplants and stir fry a few more minutes. Garnish with chopped scallions.
