I usually use barley in soups, but this time, when thinking about a side dish, I started thinking about different grains, and decided to go with barley.

This stew uses lamb, a very flavorful meat. Since lamb meat can have a bit of fat in it, it is great to make lamb stew with vegetables and beans. Vegetables and beans cooked together with lamb meat and a bit of fat really take on the flavor and become very tasty.

To make lamb stew, saute small pieces of lamb for a few minutes, then add onions and saute for a few more minutes. Add some water to cover the meat. Reduce the heat and simmer the lamb for a 2-2.5 hours, until the lamb is cooked. Next, add carrots and celery and continue simmering the stew, until the carrots are cooked. Add beans and cook for 5-10 more minutes.
