This homemade cheesecake comes together in minutes! The tart cranberry topping is perfect on top of the sweet cheesecake, creating the most amazing Instapot dessert!

Make the cheesecake topping. Wash cranberries. To the Instant Pot Pressure Cooker add ⅓ cup of sugar, cranberries and ½ cup of water. Place the lid on the Instant Pot and cook for 3 minutes.Use Natural Release and wait for the valve to drop. Carefully remove the Instant Pot Inner Pot with the topping from the Instant Pot. Replace with another clean Instant Pot Inner Pot. Let the topping cool for a bit on the counter, then put in an air tight container and store in the fridge overnight.
Make cheesecake crust. Melt 4 tablespoons of butter. Trace the bottom of the Instapot Cheesecake Pan on Parchment Paper and cut it out. Use the remaining tablespoon of butter to butter the cheesecake pan. Put the round parchment paper circle on the bottom of the cheesecake pan, and butter it as well. Add graham crackers and cinnamon to Food Processor and process to crumbles. Add melted butter and process for another minute.Put the crust on top of the parchment paper in the cheesecake pan. Spread evenly and press down with the back of a spoon. Wrap the bottom of the cheesecake in foil, and press in the frefigerator until the batter is done.
Make cheesecake batter. Wipe the Food Processor with a paper towel. Add cream cheese and ½ cup of sugar and process, until combined. Add eggs, cream and sour cream and process for another 2 minutes, until they are just combined.
Pour cream cheese batter on top of the crust. Pour 2 cups of water in the Instant Pot Pressure Cooker and put the Instant Pot Trivet inside. Place the cheesecake pan on top of the trivet.
Place the lid on the Instant Pot and cook for 25 minutes.Use Natural Release and wait for the valve to drop. Carefully remove the cake pan rfom the Instant Pot. Let it cool for a bit on the counter, then store in the fridge overnight.
- The topping will not be too sweet as is. If you like your Instant Pot cheesecake topping to be sweeter, use more sugar.- We make this recipe for cheesecake with fresh cranberries. And you can make it with frozen cranberries as well.- Instapot cheesecake is great to make in advance, a day before you would like to serve it. Make sure that both the cheesecake cranberry topping and the cheesecake itself set in the refrigerator overnight.- Use orange juice instead of water when making cranberry topping for the cheesecake for even more flavor.
