On a cutting board trim the pork roast, by cutting off most of the fat. Cut the pork into 4-5 pieces. Sprinkle the pork with Pork Carnitas Seasoning.
Wash and juice the limes, using a lime juicer.Arrange the pork in the Instant Pot Pressure Cooker. Add lime juice and water.
Place the lid on the Instant Pot, use the manual setting, and cook for 60 minutes. Use Natural Release, and wait for the valve to drop. Remove the pork from the Instant Pot to a plate. Once the pork cools, shred it.You can eat it as is, or you can make it crispy. Heat up oil in the saute pan. Once the oil is hot, add shredded pork. Cook for 5-10 minutes, until shredded pork is crispy.Serve with Air Fried Asparagus, Instant Pot Potato Salad, Cucumber Lemon Water.
