About 20 minutes before you start making the cake, take the cream cheese and eggs out of the refrigerator and place them on the counter.Melt 4 tablespoons of butter.Trace the bottom of the cheesecake panon parchment paper and cut it out. Use the remaining one tablespoon of butter for butterning of the the cheese cake pan. Put the parchment paper circle on the bottom of the pan, and butter it as well.Process graham crackers to crumbles in the food processor. Add melted butter and process for another munute.Put the crumbles on the bottom of the cheesecake pan. Spread evenly across the bottom, and press down with the back side of a soup spoon. Wrap the bottom of the cake pan in foil.
Wipe the food processor with a paper towel. Add cream cheese and sugar and process for a few minutes, until the are combined.Add eggs, cream and sour cream, and process for a minute or two, until they are just combined.
Pour the cream cheese mixture on top of the crust.Pour water in the Instant Pot and put the Instant Pot Trivet on the bottom. Put the cheesecake pan on top of the trivet.
Place the lid on the Instant Pot. Use the manual setting, and cook for 25 minutes.Use Natural Release, and wait for the valve to drop. Carefully remove the cake pan from the Instant Pot. Let it cool.After the cake cools, cover the cake with foil, and put in the fridge. Keep in the fridge overnight, so that the cake can set. Next day, carefully remove the cheesecake from the pan, and serve with Iced Latte after dinner of Garlic Parmesan Chicken Legs, Cauliflower Fritters, Cucumber Tomato Salad.
