Make the Rotisserie Chicken Rub, and measure about a third of that portion.Remove all the green stalks from the cauliflower. Wash the califlower and disassemble into small florets. In a mixing bowl, combine the cauliflower, Rotisserie Chicken Rub, and olive oil, and mix well.
Preheat the oven to 375F. Arrange the cauliflower florets on a baking sheet, and roast for 15 minutes. Turn the cauliflower, and roast for another 10 minutes. Take the cauflower out of the oven and cool it.
Use a box grater to grate the onion. Wash and chop dill on a cutting board. Wash and chop the celery. Peel and chop the eggs.
Make the Low Carb Cauliflower "Potato" Salad dressing. In a small bowl, combine mayonnaise, apple cider vinegar and about a tablespoon of the grated onions. Mix everything together.In a salad bowl combine the cauliflower, celery, eggs, dill. Add the salad dressing and mix. Sprinkle with paprika.
