In a pan on low heat, bring the heavy cream to a gentle simmer. Take the heavy cream off the heat.
Put chocolate chips in a mixing bowl. Pour heavy cream overthe chocolate chips, and let it stand for a few minutes. Then mix, until everything is completely combined. You made ganache.
Let ganache cool for 15 to 20 minutes. Then put ganache in the refrigerator for at least an hour. Line the cookie sheet with parchment paper.
Take the chocolate ganache out of the refrigerator, and roll truffles. Do so quickly, as your warm hands will warm up ganache, and it will start melting.
Roll the truffles in the rainbow nonpareil sprinkles, put them on parchment paper on the cookie sheet, and put them back in the refrigerator, until you are ready to eat them.
