The secret to this delicious and flavorful recipe is using a few ingredients that each add a lot of flavor to the dish. Olive oil makes everything delicious. Ground Coriander is one of my favorite spices, and it makes every dish taste better. And the fresh scallions that you add to the dish after the carrots are roasted add both a fresh color and a fresh, delicious flavor to this simple dish.

Ingredients for Roasted Carrots With Scallions

1 Pound of Carrots
2 Tablespoons of Olive Oil
A pinch of Ground Coriander
2 Scallions
Salt
Freshly Ground Black Pepper

How To Make Roasted Carrots With Scallions

Peel the carrots and chop them into rounds. In a mixing bowl, combine carrots, ground coriander, olive oil, salt and black pepper and mix.

Arrange the carrots on a baking sheet.

Pre-heat the oven to 350F. Roast the carrots for for 15-25 minutes or until they look golden.

Chop the scallions. Arrange carrots on a serving platter. Garnish with scallions.
