Everyone loves Italian food, and I get many requests from my readers to write more healthy Italian recipes. We love Italian recipes as well, so we are also on a lookout for delicious, healthy, low carb Italian recipes.

We were really excited to be able to create this delicious Keto Antipasto Salad for you, as it is healthy, amazingly delicious, and the best part about it is that it was naturally low carb. We didn’t really need to do any substitutions or omissions to create this dish. It was made the same way we would make it normally, except that it is low carb!

Many people wonder, what is antipasto salad? Very simply, an antipasto (and plural of it is antipasti), is something that is served as the first course, before the meal is started. We took the antipasta, and turned it into a delicious salad by adding a few simple ingredients and an amazing two ingredient antipasto salad dressing.

What’s not to love in this salad, all the ingredients are amazingly delicious! Just like with the Low Carb Italian Meatball Salad, we start with mixed greens and tomatoes, and then add meats and cheeses!

How To Make Antipasto Salad

First, you will need all the delicious antipasto salad ingredients. And the best thing about this amazingly delicious Italian salad, is that it needs just a few ingredients.

If you are wondering, whats in an antipasto salad, for this salad we are using mixed greens (you can also use baby spinach, or any kind of lettuce, that you like), grape tomatoes, red onions, black olives, mozzarella (you can also use fresh mozzarella balls or provolone), Pamesan cheese, Italian prosciutto (you can use other Italian meats, either in addition or instead of prosciutto, such as salami or ham).

The antipasto salad dressing is also very simple to make with red wine vinegar and olive oil.

The result is an amazingly delicious and healthy low carb salad, that you can serve as an appetizer or a salad course.
How To Make Antipasto Salad

In a salad bowl, combine all the ingredients, add the dressing, and mix. That’s it, your delicious first course is ready to be served!

You can use different Italian meats in this dish. You can also use salami, Proscuitto Cotto, Italian ham or any other meat.
