Tzaziki is a Greek yogurt sauce, that is usually served in Gyro sandwiches. This is one of my favorite sauce, because it is light, refreshing and it goes with anything – gyros, lamb, or chicken. It is great as a salad dressing, too!

When you make Tzaziki sauce, you should make sure that as little water as possible gets into the sauce. Cucumbers is one of the ingredients, and cucumbers are very watery, and you must make sure that you dry your cucumbers before you put them into the sauce. Otherwise, the sauce will have a very watery consistency, and that is not what Tzaziki is about.

Since I recommend grating your cucumbers, I also recommend squeezing them after you grate them to make sure there is as little water as possible left in them. I also recommend using plain Greek yogurt, as it is thicken then regular yogurt.
