Here is a slightly different take on Greek Salad. This salad has lots of delicious ingredients, such as tomatoes, cucumbers, red onions, feta cheese, Kalamata olives, dill, parsley and croutons. Make croutons that are good for you by making croutons our of whole grain bread.

To dress this salad, make a very simple Greek Salad Dressing, with Red Wine Vinegar, olive oil, Greek oregano and black pepper.

 

Greens With Goat Cheese, Cranberries and Pecans

Here is another very simple salad with a very easy dressing recipe. You will need some Mesclun Greens, some goat cheese, dry cranberries and pecans.

Dress this salad with the dressing made out of lemon juice, olive oil and black pepper. Again, very simple and very tasty. As you can see, you can make fabulous, delicious summer salads and you will not need to make them too calorific.
