Stuffed Peppers Recipes
Here is one of my favorite comfort foods - stuffed peppers. You can use any color peppers - here I used a mix of red, yellow and orange peppers, but you can use any color of peppers you want.
The very first time I made these stuffed peppers, I found that my rice in the stuffing was hard. Turns out that since I am using raw rice in the stuffing, I must add a lot of water to it. This is because the rice needs to cook inside the peppers, and to do that, it needs a lot of water. So make sure that your stuffing has enough water to cook the rice.
Serve these peppers with some sour cream and a simple salad, such as Tomato, Dill and Cucumber Salad, Chickpea Salad, Cabbage Salad.

Ingredients For Stuffed Peppers:
6 Medium Peppers, any color - red, orange, yellow, green
1.25 pounds of ground beef
1/4 cup of rice
1 medium onion
1.25 cups of water
28 oz can of crushed tomatoes
Additional 2 cups of water
Italian seasoning (dry oregano, dry basil, dry thyme, dry rosemary)
Salt
Pepper
How To Make Stuffed Peppers:
Wash the peppers. Cut the tops off. Carefully clean the peppers from the seeds and membranes, while keeping the peppers themselves intact.
Make the stuffing: Chop the onion on a cutting board. Combine the beef, onions, rice, 1.25 cups of water, Italian seasoning, salt and pepper. If the stuffing is not wet enough, add a bit more water.
Spoon an equal amount of stuffing into each pepper.
Put the peppers into a large pot. In a separate bowl, combine crushed tomatoes and 2 cups of water and mix. Pour the mixture over peppers and add more water, so that the water reaches the tops of the peppers.
Bring to boil and reduce the fire. Simmer for 2-3 hours, until the peppers and the stuffing are cooked.
Serve stuffed peppers on a plate.

Do you cut the bottom part of the pepper or does it act like a little bowl for the stuffing. I have seen similar recipes to this but not quite.
Angela, no, I don’t cut the bottom part of the pepper. You need the bottom, because you want the pepper to act as a little bowl for stuffing.

Biana, boil the pepper in V8 instead of water - for some reason, the presence of carrots and celery along with tomatoes makes this such a delicious dish - this one is my favorite!
