Sausage and Peppers
Regular sausage and peppers recipes usually call for raw peppers and onions stir fried with the sausage. I decided to change this a bit and used roasted red peppers in this recipe. I love roasted red peppers, they sweet and very flavorful. They add another dimension to this simple dish.
Serve this dish with a simple salad, such as Caprese Salad Recipe, Radish and Cucumber Salad, Tomato Salad With Blue Cheese, Beet Salad.

Sausage and Peppers Ingredients:
1.5 Pounds of bulk mild Italian Sausage
2 Tablespoons of Olive Oil
4 Large Red Peppers (or 6 Medium Red Peppers)
2 Medium Onions
Red Pepper Flakes (to taste)
Salt
Freshly Ground Black Pepper
Tools You Will Need
Cutting Board
Saute Pan
Baking Sheet
Pasta Pot
Dinner Plates
How To Cook Sausage and Peppers:
Roast red peppers on a baking sheet. Take them out of the oven. Once they are cool, peel and remove the top and the seeds. Chop them on a kitchen cutting board and set aside.
Chop onions.
Heat up the olive oil in the saute pan. Add pepper flakes and sausage to the oil. Saute until the sausage is almost done. Add onions and peppers and cook them together until sausage is completely done. Add salt and pepper to taste.
Cook pasta according to the instructions on the package. Use pasta pot to cook pasta. Serve Sausage and Peppers with pasta on a dinner plate.
