Quinoa Recipes: Quinoa Salad With Eggplants and Peppers
Here is a variation on a quinoa salad recipe that I posted about in the past. In that quinoa salad recipe with eggplants and peppers I chopped eggplants and red peppers and then roasted them.
In this recipe I roasted the peppers and eggplants first, and then peeled and chopped them. I also added red onions and herbs to the quinoa salad. I actually enjoyed this version of the salad better, as the flavors of peppers and eggplants seemed to have developed deeper.

Ingredients For Quinoa Salad With Eggplants and Peppers
1.5 cups of quinoa
3 Red and Yellow Bell Peppers
1 Large Eggplant
1/2 of a small Red Onion
A handful of Basil
A handful of Parsley
2 Tablespoons of Olive Oil
1 Tablespoon of Lemon Juice
Salt
Pepper
How To Make Quinoa Salad With Eggplants and Peppers
Cook quinoa according to the directions on the package. Cool the quinoa.
Roast the eggplant and peppers. Cool eggplants and peppers, peel and chop.
Chop onions, parsley and basil.
In a salad bowl combine quinoa, peppers, eggplants, onions, parsley and basil. Add lemon juice, olive oil and salt and pepper to taste. Mix the salad.
