Panzanella Salad Recipe

So what do you do if you have old bread or croutons? You make Panzanella, of course! Panzanella is an Italian salad that you make with old bread, vegetables and herbs.
In my panzanella I used homemade croutons. I have to tell you, I really enjoyed this salad. The combination of red onions, tomatoes, cucumbers and basil worked great, and the lemony dressing really pulled all of ingredients together.

Tools You Will Need To Make Panzanella
Knife
Cutting Board
Salad Bowl
Small bowl for making salad dressing
Ingredients For Panzanella
3 medium tomatoes
2 medium cucumbers
1/2 of a small red onion
a handful of basil
1 tablespoon of fresh lemon juice
3 tablespoons of olive oil
salt
pepper
How To Make Panzanella
Chop tomatoes, onion, and basil. Peel and chop the cucumber.
Make the Panzanella dressing - whisk together lemon juice, olive oil, salt and pepper.
In a salad bowl combine cucumbers, tomatoes, onions, and croutons. Pour the dressing over and mix. Sprinkle with basil. Let the salad stand for 10 minutes for bread and vegetables to absorb the dressing.
