1 Tablespoon of Olive Oil
1 Medium Onion
2 Celery Stalks
2 Medium Carrots
1.5 Cups of Lentils
3 Medium Potatoes
Scallions

Red Pepper Flakes
Ground Coriander
Ground Cumin
Turmeric (just a bit)
Freshly Ground Black Pepper
Salt

How To Make Lentil Soup Vegetarian

Cook the lentils according to the instructions on the lentils package.

Peel, wash and chop the onion. Peel, wash and chop the carrots. Wash and chop the celery. Peel, wash and chop the potatoes.

Wash and chop dill and/or parsley, if using them in the soup.

Heat up the olive oil in a soup pot or dutch oven. Add onions, carrots and celery, and cook for a few minutes, until they become soft.

Add pepper flakes, cumin, coriander, and turmeric to the vegetables. Cook for a few more minutes. Add water to the pot and bring to a boil.

Add potatoes and lentils to the soup, and cook until the potatoes are done.

Clean, wash and chop the scallions. When serving the soup, sprinkle the soup with scallions.
