Green Bean Salad With Almonds and Red Onions



Looking for information on how to cook fresh green beans? Just steaming and eating fresh green beans is great, but you can make them more interesting too with other green bean recipes. I like them in this green bean salad: Green Beans and Tomato Salad. And here is another green bean salad you can make - combine steamed green beans with almonds, red onions and a zesty lemon dressing.

The lemon dressing uses both lemon rind and lemon juice and makes the whole salad very fresh and lemony. The almonds add crunch and red onions add great color, a bit of spiciness and even more crunch. This is a great salad to serve with lots of different dishes, for example with Chicken Piccata or Shrimp Scampi.

Green Bean Salad With Almonds and Red Onions

Ingredients For Green Bean Salad With Almonds and Red Onions

1 Pound of Green Beans
1/2 of a small Red Onion
A handful of slivered Almonds

Lemon Rind from 1 Lemon + 1 Tablespoon of Lemon Juice from the same Lemon
2 Tablespoons of Olive Oil
Salt
Pepper

How To Make Green Bean Salad With Almonds and Red Onions

Clean and wash the beans. Steam for 5-7 minutes. Cool.

Toast the almonds.

Chop the onion.

Make the dressing - combine lemon rind, lemon juice, olive oil, salt and pepper.

In a salad bowl, combine the green beans and onions. Add the dressing and mix. Add the almonds.
