Keto Pan Fried Eggplant Recipe

I love eggplant, and one of my favorite ways to cook is it to make fried eggplant. When you fry eggplant you need to be careful with how much oil you use. Eggplants drink a lot of oil as you fry them, so it does not matter how much oil you put in the skillet – the eggplant will drink all of it.

To minimize the amount of oil you use, heat up the oil in the beginning, and add eggplant to pre-heated oil, so that you minimize the frying time.

Another trick is salting eggplants before you fry them. Sometimes eggplants are slightly bitter. To get rid of the bitterness I salt them and let the salt draw out the bitterness. This process draws out the juice and makes eggplants very wet. Because of this I dry them with paper towels before frying.

Eggplants
Oil for Frying
Salt

How To Fry Eggplant

Wash eggplants and cut into rounds on a cutting board.

Arrange eggplant pieces in one layer on a cutting board. Salt each piece and let them stand for about 20 minutes.

After 20 minutes use paper towels to dry the eggplant pieces completely.

Pre-heat oil in the skillet. Once the oil is hot, add eggplant pieces to the skillet. Be careful not to crowd them.

Fry for a few minutes on each side, then turn them and fry on the other side until done.

Drizzle a bit of balsamic vinegar on top of eggplants – this makes a great appetizer!

  1. I love to peel eggplant, cut it into one inch cubes and saute it with onions and peppers. It tastes just like mushrooms and is great alone or as a base for many other dishes. I stumbled onto this when I was very young. I was trailer camping and another camper gave us an eggplant and some other fresh veggies. I had never had eggplant, didn’t have a cookbook handy and no clue what to do with it so just diced it up and tossed it in with the other veggies. Now I grow eggplant every year and call them my “mushroom” plants LOL.
