  • Peel and wash the onions. Chop the onion.
    Trim the fat on the beef brisket, and salt both sides of the beef brisket.
  • Set the Instant Pot Pressure Cooker to saute. Add oil to the Insta pot.
  • Once the oil is hot, add the onions, and saute for a few minutes.
    Mix 1.5 cups of water and crushed tomatoes. Turn off the Instant Pot. Add the brisket and the crushed tomatoes mix.
  • Place the lid on the Instant Pot. Use the manual setting, and cook for 75-90 minutes, depending on how soft you want your beef brisket to be.
    Use Natural Release, and wait for the valve to drop.
  • Once the valve drops, carefully open the lid. Remove the brisket, put it on a clean cutting board, and let it rest for 10-15 minutes. Cut the beef brisket against the grain, and serve with Low Carb Cauliflower Fritters and Garlic and Broccoli Rabe.
