Cauliflower Salad With Scallions, Parsley And Dill

Here is a very simple salad that I made out of cauliflower. I usually like raw cauliflower that you can get in salad bars, but you will usually need to cut it into smaller, bite-sized pieces later, when you eat the salad. Too much work, right? 🙂

So, I was thinking that if you want to make a salad with raw cauliflower, you need to cut the cauliflower into bite-sized pieces when you are making the salad. The easiest thing to do is to use a food processor to thinly slice the cauliflower. If you don’t have a food processor, then simply cut the cauliflower into small, thin pieces.

Cauliflower is really the star in this Cauliflower Salad Recipe, but scallions, parsley, and dill do add a lot of flavor to this salad. With just a few ingredients, this salad is pretty simple to make. All you need is cauliflower, scallions, dill, parsley, lemon juice, olive oil and salt – just seven ingredients.

To make the salad, thinly slice the cauliflower. Chop scallions, dill and parsley. Combine cauliflower with dill, parsley and scallions. Season with a bit of salt. Dress with lemon juice and olive oil. This is a simple and delicious salad.

Serve this cauliflower salad with a pasta dish, such as Pasta With Brussels Sprouts, Pancetta, Parmesan Cheese.

Ingredients For Cauliflower Salad With Scallions, Parsley And Dill

1 small head of Cauliflower
2-3 Scallions
A bunch of Dill
A bunch of Parsley

1 Tablespoon of freshly squeezed Lemon Juice
2 Tablespoons of Olive Oil

How To Make Cauliflower Salad With Scallions, Parsley And Dill

Clean and wash the cauliflower. If using a food processor, thinly slice cauliflower in the food processor. If not using a food processor, cut cauliflower into small, thin pieces.

Wash and chop scallions on a cutting board.

Wash and chop parsley. Wash and chop dill.

In a salad bowl combine cauliflower, scallions, parsley and dill. Season with a bit of salt. Dress with lemon juice and olive oil.

Serve this cauliflower salad with a pasta dish.

I’ve never eaten cauliflower as raw… I actually didn’t know we can eat it raw! =P In Japan we always boil broccoli too – I think species are a little different, there is no way we can eat raw broccoli in Japan…maybe so as cauliflower. I just never imagine it’s edible as raw! Looks delicious – I love cauliflower!
