How To Cook Bundt Cake With Mascarpone Frosting

Ok, back to the bundt cake. I am not that much of a baker. I like to cook, but I don’t bake a lot. I am guessing this because when I cook, I know how to improvise and make changes if something isn’t working. For example, recently I made a lentils dip, but it turned out a bit too thin. So I added a can of pinto beans to the lentils dip, and it became just right. Not only that, a combination of lentils and pinto beans in a dip was delicious.

Not so with baking. So when I do bake, I try to make simple desserts, so that I won’t have to do on-the-spot corrections if something isn’t working. I like to make no-bake desserts, such as tiramisu or chocolate mousse. Another simple dessert that I like to make are crisps.

If you are looking to make a dessert, and you don’t bake a lot, crisps and crumbles are great. Every time I have made them, they turned out great, and they are very simple to make. This time, though, I made a real cake, a real bundt cake, with frosting and everything. This is actually a great cake. If you don’t count a bit of butter for greasing the bundt cake pan, you don’t need any oil or butter in this bundt cake recipe. So if you want a delicious cake recipe with just a bit less butter/oil this one is it. Don’t worry, it still has flour, eggs and sugar, so all the major food groups are still covered 😉

 

Bundt Cake Recipes

It is pretty simple to make this cake – if you can separate eggs, you can make the cake, seriously. Whip the egg whites with a pinch of sugar. Cream the yolks with sugar, add flour. Then, mix in egg whites and bake.

You can eat the cake as is, and it is great, but why stop there? You can make a frosting to go inside too! To make the frosting I am using mascarpone. Mascarpone is Italian cheese that is usually used in making delicious tiramisu. Here I am using mascarpone with some lingonberry jam to make the frosting.

I also made a bit of simple syrup that I used to make the cake moist. To put the cake together, cut the cooled off cake into halves, spread a bit of simple syrup on the cake, and then spread the frosting on the bottom half. Put the top half back on the cake, and put the cake in the fridge.

Bundt Cake Recipes

Ingredients For Bundt Cake Recipes With Mascarpone Frosting

6 Eggs
1 cup of Flour
1 cup of Sugar + 1 pinch of Sugar
1 teaspoon of Vanilla

Frosting

8 oz of Mascarpone
3-4 Tablespoons of Lingonberry Jam

Simple Syrup

1 cup of Water
1 cup of Sugar

How To Make Bundt Cake Recipes With Mascarpone Frosting

Pre-heat the oven to 350F. Grease the bundt cake pan with butter.

Separate the eggs. Add the egg whites and a pinch of sugar to a mixing bowl and beat with a mixer until stiff.

In another mixing bowl beat together sugar and egg yolks. Add vanilla and flour and beat again.

Add the egg whites to the yolks mixture, and mix with a spoon.

Add the cake batter to the bundt cake pan and bake for about 40 minutes. Take the cake out of the oven and cool.

Make the frosting: beat mascarpone and jam together with a hand mixer. Try it – if not sweet enough, add a bit of sugar to it.

Make the simple syrup: Bring water to boil, add sugar and stir, until the sugar dissolves. Cool the simple syrup.

Put the cake together: Cut the cake into halves lengthwise. Brush a bit of simple syrup on the top half of the bottom half of the cake, and on the bottom part of the top part of the cake. Spread the frosting on the bottom half of the cake. Put the top half of the cake back on and put the cake in the fridge to set.

  1. I like the photos and I would never have thought to cut the cake in half and add another element to it. I love baking and cooking, but my healthy cooking requires less baking…dang it!
