Bruschetta Recipe - Bruschetta With Tomatoes and Parsley
Bruschetta is one of my favorite summer appetizers - the combination of tomatoes, garlic and herbs just says summer to me.
What is Bruschetta? Usually, it is toasted Italian or French bread, with some mix of vegetables or a mix of vegetables and cheese on top. Here is another bruschetta recipe, Bruschetta Recipe With Tomatoes, Feta, Onions, Parsley And Dill.
Many recipes for bruschetta that I have read only use garlic to rub the toasted bread. I like a stronger garlic flavor, so I add chopped garlic to the tomatoes. If you prefer less of a garlic bite, just rub your toasted bread with a garlic clove instead of adding it to the tomatoes.
To make bruschetta, just put the bread on a plate and spoon the vegetable mix on top.

Ingredients for Bruschetta With Tomatoes and Parsley
1 French Baguette
3 Medium Tomatoes
1/2 Tablespoons of Parsley
1/2 Of A Small Onion
2 Small Garlic Cloves
3 Tablespoons Of Olive Oil
Salt
Freshly Ground Black Pepper
How To Make Bruschetta With Tomatoes and Parsley
Cut the bread into 1/2 inch slices on a cutting board. Arrange on the baking sheet. Bake in the oven at 350F for 5-10 minutes, just until they become golden. Remove from the oven and let the bread cool on a platter.
Chop tomatoes and onions into small pieces. Finely chop garlic and parsley. Combine tomatoes, onions, garlic, parsley, olive oil, salt and pepper in a salad bowl and mix gently.
Let the salad stand for 10 minutes for the flavors to mix.
Put a slice of bread on a dinner plate. Spoon the tomato mixture over the bread and enjoy!
