Arugula Salad With Tomatoes And Red Onions



Here is another salad that is very simple to make and that has just a few ingredients. This salad has very few ingredients, but it tastes great, because each ingredient provides great flavors.

Arugula provides a very strong, peppery flavor. Tomatoes provide a burst of sweeter flavor. Red onions are spicy and round up the salad very well. The dressing of lemon juice and olive oil makes this a complete salad and provides a lemony note in addition to the vegetables.

Because arugula is a spicy green, lemon juice works very well with it and provides a very nice counter-balance. If you have never tried arugula, I have to tell you that it has a strong flavor, unlike, say, iceberg lettuce or Romaine lettuce. The first time I tried arugula I thought it was a bit too much, too spicy for a green. But as I started using it in salads, with different dressings, I saw that you can moderate it with other ingredients.

Serve this arugula salad with Pasta With Italian Sausage and Broccoli, Chicken Piccata, Meyer Lemon and Asparagus Risotto.

Cutting Board

Ingredients For Arugula Salad With Tomatoes And Red Onions

A few handfuls of Arugula
Grape, Cherry or Campari Tomatoes
1/8 of a Small Red Onion

1/2 Tablespoon of Lemon Juice
2 Tablespoons of Olive Oil
Salt
Black Pepper

How To Make Arugula Salad With Tomatoes And Red Onions

Wash and dry arugula.

Cut the tomatoes on a cutting board. If using grape of cherry tomatoes, cut them in halves. If using Campari tomatoes, cut them into quarters. Chop the red onion on a cutting board.

In a salad bowl, combine arugula, tomatoes and onions. Add the lemon juice, olive oil, salt and pepper to taste and mix.
